Barry Walker (the Chief Salami Wrangler) established the original salami-making and meat-curing business in 2018 – running workshops and a charcuterie retail business from the Wolverton Park site. This has since diversified and grown considerably to also become a farm shop in 2021, with a new café facility at the front added in 2022.
The business has won many awards for its salami and sausages, including the 2022 Great Hampshire Sausage & Pie Awards, where they picked up gold for 2 of their sausage types (Venison & red wine and Italian Salsici), silver for their Italian Chilli and Bronze for their merguez with fennel.
The meat is sourced from small producers in the Hampshire area. They have also reared their own pigs, choosing Oxford Sandy & Black as the breed of choice.
A wide range of sausages are made using their own butchered meat and own seasonings – the final process of packing the hogskins undertaken by the butchers next door.
In addition to sausages and charcuterie they also make their own bakery products, including scotch eggs, pies, quiches and much more. They have a vast range of British cheeses in stock, with new ones arriving weekly.
